A frittata is an easy baked egg dish that looks fancy enough to serve for brunch with friends, but is also versatile and hearty enough to eat at any meal! It’s also a great way to use up any leftovers (raw or cooked veggies, cheese, even some meat or grains work!) to minimize food waste and free up valuable fridge real estate. I always like to use two types of cheese for maximum creaminess and flavor.

Black Bean Burgers with Sweet Potato “Buns” - gluten-free, vegetarian, vegan-optional! Most of the chopping and mixing work is done in the blender or food processor, and the buns roast while you assemble the burger patties, sauce, and pickled onions. Smoky, spicy, tangy, and delicious!
